You can use the brand properties to prune the toolbar's menu items for all users, or just for anonymous users. To do this, use one of the following brand properties:

zenToolbarHideElements
zenToolbarHideElementsForAnonymousUsers

and list the ID attributes of the menu items (examples below) to make a jQuery-style comma-separated list of selectors.
